It sounds like you have approximately 9 grains of hardness per gallon in your water.
The water is a little basic, but it isn't too bad.
If we assume the house is built for 4 -5 people, you should have approximately 400-500 gallons per day of usage. This is 3600-4500 grains per day. Since you should regenerate every 3-4 days, you should size your system for 14,400-18,000 grains. A 1 cubic foot unit will take care of the problem. You have pricing on the various options based on features you want to provide. I think the base softener would be fine for you.
The Nitrates are not at an unsafe level, however it would still be good to reduce them. They can be reduced by reverse osmosis for drinking water.
